  • 2 tablespoons butter
  • Salt to taste

Method
 

  1. Remove steaks from refrigerator 30 minutes before cooking
  2. Pat steaks dry with paper towels
  3. Season generously with salt and crushed peppercorns
  4. Heat cast-iron skillet until smoking hot
  5. Sear steaks 3-4 minutes per side for medium-rare
  6. Rest steaks 5-7 minutes before slicing
  7. Prepare mushroom sauce in same skillet
  8. Slice steaks against the grain
  9. Pour sauce over steak and serve immediately
