- Remove steaks from refrigerator 30 minutes before cooking
- Pat steaks dry with paper towels
- Season generously with salt and crushed peppercorns
- Heat cast-iron skillet until smoking hot
- Sear steaks 3-4 minutes per side for medium-rare
- Rest steaks 5-7 minutes before slicing
- Prepare mushroom sauce in same skillet
- Slice steaks against the grain
- Pour sauce over steak and serve immediately
