Rotel Pasta Fiesta

- 1 lb ground beef
- 1 can 10 oz Rotel diced tomatoes with green chilies
- 2 cups uncooked pasta shells
- 2 cups shredded cheddar cheese
- 1 cup water
- 1 packet taco seasoning
- Salt and pepper to taste
Brown ground beef in a large skillet over medium heat
Drain excess fat
Add Rotel tomatoes, taco seasoning, and water
Stir in uncooked pasta shells
Cover and simmer for 12-15 minutes
Sprinkle generously with cheddar cheese
Let stand for 2-3 minutes until cheese melts
