  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. Cook the Beef: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 5 minutes. Season with salt and pepper. Remove the beef from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add the sliced onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until softened.
  4. Make the Sauce: In the skillet, melt butter over medium heat. Add the flour and cook for 1-2 minutes, stirring constantly. Gradually add the beef broth and heavy cream, stirring until the mixture thickens, about 3-4 minutes.
  5. Add the Cheese: Lower the heat to low and add the shredded provolone and mozzarella cheese. Stir until melted and the sauce becomes creamy.
  6. Combine the Pasta and Beef: Add the cooked pasta and beef back into the skillet. Toss everything together until the pasta is well coated with the creamy cheese sauce.
