  • 2 cups crushed vanilla wafers
  • 1 cup finely chopped nuts
  • 1 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 1/4 cup dark rum
  • 2 tablespoons corn syrup
  • Extra cocoa powder for coating

Method
 

  1. Combine crushed wafers, nuts, sugar, and cocoa in a bowl.
  2. Mix rum and corn syrup in a separate container.
  3. Pour wet ingredients into dry mixture. Stir until well combined.
  4. Chill the mixture for 30 minutes.
  5. Roll into 1-inch balls.
  6. Coat each ball in cocoa powder.
  7. Place on a baking sheet lined with wax paper.
  8. Chill for at least 2 hours before serving.
