- Boil potatoes in salted water until tender. Drain and slice.
- Cook bacon in a skillet until crisp. Remove and set aside.
- Sauté onion in bacon fat until soft.
- Whisk vinegar, sugar, and mustard in a bowl.

- Add potatoes to skillet. Toss gently to coat.
- Mix in bacon and parsley. Season with salt and pepper.
