warm German potato salad

Imagine a warm, tangy potato dish unlike any salad you've had. That's warm German potato salad, a favorite in German cuisine. It's cozy and has a zesty vinegar dressing.

Equipment

  • Large pot
  • Skillet
  • Mixing bowl
  • Colander
  • Sharp knife

Ingredients
  

  • 2 pounds red potatoes
  • 6 slices bacon diced
  • 1 medium onion finely chopped
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Boil potatoes in salted water until tender. Drain and slice.
  • Cook bacon in a skillet until crisp. Remove and set aside.
  • Sauté onion in bacon fat until soft.
  • Whisk vinegar, sugar, and mustard in a bowl.
  • Pour mixture into skillet. Simmer for 1 minute.
  • Add potatoes to skillet. Toss gently to coat.
  • Mix in bacon and parsley. Season with salt and pepper.
  • Serve your warm German potato salad immediately.
