- 2 pounds red potatoes
- 6 slices bacon diced
- 1 medium onion finely chopped
- 1/4 cup white vinegar
- 2 tablespoons sugar
- 1 tablespoon Dijon mustard
- 1/4 cup fresh parsley chopped
- Salt and pepper to taste
Boil potatoes in salted water until tender. Drain and slice.
Cook bacon in a skillet until crisp. Remove and set aside.
Sauté onion in bacon fat until soft.
Whisk vinegar, sugar, and mustard in a bowl.
