Ingredients
  

  • 2 cans black-eyed peas drained and rinsed
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 cup corn kernels
  • 1/2 red onion finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • Salt and pepper to taste

Method
 

  1. In a large bowl, mix together black-eyed peas, bell peppers, corn, onion, and cilantro.

  4. Cover and chill for at least 2 hours or overnight to blend flavors.
