stuffed pepper casserole

Busy families will appreciate this healthy meal. It keeps the taste of stuffed peppers but is easier to make. No need to stuff each pepper individually. Just mix all the ingredients into a casserole.

Ingredients
  

  • 1.5 pounds ground beef
  • 3 bell peppers chopped
  • 2 cups cooked rice
  • 1 can 15 oz tomato sauce
  • 1 cup shredded cheese
  • 1 diced onion
  • 2 minced garlic cloves
  • Salt and pepper to taste

Equipment

  • 9x13 inch casserole dish
  • Large skillet
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method
 

  1. Preheat oven to 375°F
  2. Brown ground beef in skillet
  3. Add chopped bell peppers and onions
  4. Stir in cooked rice and tomato sauce
  5. Transfer mixture to casserole dish
  6. Top with cheese
  7. Bake for 25-30 minutes
