  • 1½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries finely chopped
  • Buttercream Frosting Ingredients
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 1 tsp vanilla extract
  • Fresh strawberries for garnish

Equipment

  • 12-cup muffin tin
  • Cupcake liners
  • Electric mixer
  • Large mixing bowls
  • Piping bag with star tip
  • Measuring cups and spoons
  • Cooling rack

Method
 

  1. Preheat oven to 350°F and line muffin tin with cupcake liners
  2. Mix dry ingredients in a medium bowl
  3. Cream butter and sugar until light and fluffy
  4. Add eggs one at a time, mixing thoroughly
  5. Gradually add dry ingredients and milk
  6. Fold in chopped strawberries
  7. Fill cupcake liners ⅔ full
  8. Bake for 18-20 minutes
  9. Cool completely before frosting
  10. Frosting and Decoration
