Cook the Chicken – In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.
Make the Sauce – In the same skillet, add the salsa, diced green chilies, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and let the sauce simmer for 3-4 minutes.
Add the Tortillas – Add the cut-up flour tortilla strips to the skillet. Stir gently to coat the tortillas with the sauce. Cook for 2-3 minutes until the tortillas soften.
Add the Chicken and Sour Cream – Return the cooked chicken to the skillet and stir in the sour cream. Mix everything together and cook for 2-3 minutes, allowing the sauce to thicken slightly.
Top with Cheese – Sprinkle the shredded cheese over the top and reduce the heat to low. Cover the skillet with a lid and let it cook for 2-3 minutes, or until the cheese has melted.
Serve and Garnish – Garnish with fresh cilantro if desired and serve immediately.
