Sour Cream Chicken Enchilada Skillet Recipe

Ingredients
  

  • 450 g boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 tablespoon 15 g olive oil
  • 200 g salsa your choice of heat level
  • 1 can 115 g diced green chilies
  • 240 g sour cream
  • 150 g shredded cheese cheddar, mozzarella, or a blend
  • 4 medium flour tortillas about 160 g, cut into strips
  • 1 teaspoon 5 g chili powder
  • 1 teaspoon 5 g cumin
  • 1/2 teaspoon 2 g garlic powder
  • 1/2 teaspoon 2 g onion powder
  • 1/4 teaspoon 1 g salt
  • 1/4 teaspoon 1 g black pepper
  • Fresh cilantro optional, for garnish

Equipment

  • 12-inch skillet
  • Knife and cutting board
  • Measuring spoons and cups
  • Spoon or spatula for stirring
  • Can opener (for salsa and green chilies)

Method
 

  1. Cook the Chicken – In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.
  2. Make the Sauce – In the same skillet, add the salsa, diced green chilies, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and let the sauce simmer for 3-4 minutes.
  3. Add the Tortillas – Add the cut-up flour tortilla strips to the skillet. Stir gently to coat the tortillas with the sauce. Cook for 2-3 minutes until the tortillas soften.
  4. Add the Chicken and Sour Cream – Return the cooked chicken to the skillet and stir in the sour cream. Mix everything together and cook for 2-3 minutes, allowing the sauce to thicken slightly.
  5. Top with Cheese – Sprinkle the shredded cheese over the top and reduce the heat to low. Cover the skillet with a lid and let it cook for 2-3 minutes, or until the cheese has melted.
  6. Serve and Garnish – Garnish with fresh cilantro if desired and serve immediately.
