Soft Pretzel Bites with Vegan Cheese Sauce Recipe

Ingredients
  

  • For the Pretzel Bites
  • 500 g all-purpose flour for structure
  • 7 g instant yeast to help them rise
  • 300 ml warm water to activate the yeast
  • 25 g brown sugar for a touch of sweetness
  • 8 g salt for flavor
  • 1 L water for boiling
  • 30 g baking soda for the boiling step
  • 30 g melted vegan butter for brushing
  • Coarse salt for sprinkling
  • For the Vegan Cheese Sauce
  • 100 g raw cashews for creaminess
  • 20 g nutritional yeast for a cheesy flavor
  • 200 ml plant-based milk to adjust consistency
  • 3 g garlic powder for depth of flavor
  • 3 g onion powder for depth of flavor
  • 10 ml lemon juice for slight tanginess
  • 8 g tapioca starch for stretchiness
  • Salt and pepper to taste

Method
 

  1. Prepare the Dough: In a mixing bowl, combine warm water, yeast, and brown sugar. Let it sit for 5 minutes until foamy. Add flour and salt, then knead until smooth. Cover and let it rise for an hour.
  2. Shape and Cut: Punch down the dough, divide it into sections, and roll each into a long rope. Cut into bite-sized pieces.
  3. Boil the Pretzel Bites: Bring 1L of water to a boil and add baking soda. Drop the dough pieces in for 30 seconds, then remove and place them on a parchment-lined baking sheet.
  4. Bake to Perfection: Brush with melted vegan butter and sprinkle with coarse salt. Bake at 220°C (425°F) for 12-15 minutes until golden brown.
  5. Make the Vegan Cheese Sauce: Blend soaked cashews with nutritional yeast, garlic powder, lemon juice, and plant-based milk. Heat in a saucepan, adding tapioca starch, and stir until thickened.
