Smothered chicken with rice

  • 4 chicken thighs bone-in and skin-on
  • 2 cups long-grain white rice
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Method
 

  1. Season chicken with salt and pepper.
  2. Heat oil in a skillet over medium-high heat. Add chicken and cook until golden brown on both sides.
  3. Remove chicken and set aside. In the same skillet, sauté onions and garlic.
  4. Sprinkle flour over the vegetables and stir to create a roux.
  5. Slowly add chicken broth, stirring constantly to avoid lumps.
  6. Return chicken to the skillet, cover, and simmer for 30 minutes.
  7. Meanwhile, cook rice according to package instructions.
  8. Serve chicken and gravy over rice.
