smoked salmon salad

Ingredients
  

  • 8 oz smoked salmon thinly sliced
  • 4 cups mixed salad greens
  • 1 cucumber sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup capers drained
  • 1/4 cup fresh chives chopped
  • 1/2 cup sour cream
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

  1. In a small bowl, mix sour cream, lemon juice, capers, and chives for the dressing.
  2. Season the dressing with salt and pepper to taste.
  3. In a large bowl, combine salad greens, cucumber, and red onion.
  4. Gently toss the salad with half of the caper chive dressing.
  5. Arrange the dressed greens on plates.
  6. Top with smoked salmon slices.
  7. Drizzle remaining dressing over the salmon.
  8. Garnish with extra chives and serve immediately.
