Sicilian rice

Craving a taste of Italy? Look no further than the Sicilian rice (arancini) casserole. This cozy dish brings the flavors of traditional Italian street food to your dinner table. It's a delicious twist on the classic arancini, turning those crispy rice balls into a family-style bake.

Ingredients
  

  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese diced
  • 1/4 cup breadcrumbs
  • 1 egg beaten
  • 1/2 cup ground beef cooked
  • 1/4 cup peas
  • 2 cups marinara sauce
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook Arborio rice in chicken broth until tender.
  3. Mix cooked rice with Parmesan, egg, and seasonings.
  4. Layer half the rice mixture in the baking dish.
  5. Add beef, peas, and mozzarella on top.
  6. Cover with remaining rice mixture.
  7. Sprinkle breadcrumbs over the top.
  8. Pour marinara sauce evenly over the casserole.
  9. Bake for 25-30 minutes until golden and bubbly.
