Savory Steak Gorgonzola Alfredo with Creamy Parmesan Sauce Recipe

  • For the Steak:
  • 450 g steak sirloin, ribeye, or filet mignon
  • 10 g olive oil
  • 5 g salt
  • 3 g black pepper
  • 3 g Italian seasoning
  • For the Alfredo Sauce:
  • 30 g butter
  • 10 g garlic minced
  • 250 g heavy cream
  • 100 g Parmesan cheese grated
  • 80 g Gorgonzola cheese crumbled
  • 3 g salt
  • 2 g black pepper
  • 2 g red pepper flakes optional
  • For the Pasta:
  • 300 g fettuccine or tagliatelle
  • 5 g salt for boiling water
  • 10 g fresh parsley chopped, for garnish

Method
 

  1. Step 1: Prepare the Steak
  2. Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
  3. Pat dry with a paper towel, then season both sides with salt, pepper, and Italian seasoning.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Sear the steak for 3-4 minutes per side (for medium-rare) or adjust the time to your preferred doneness.
  6. Remove the steak from the pan, cover with foil, and let it rest for 5 minutes before slicing.
  7. Step 2: Cook the Pasta
  8. Bring a large pot of salted water to a boil.
  9. Add the pasta and cook according to package instructions until al dente.
  10. Reserve 60ml of pasta water, then drain and set aside.
  11. Step 3: Make the Alfredo Sauce
  12. In a medium saucepan, melt butter over medium heat.
  13. Add minced garlic and sauté for 1 minute until fragrant.
  14. Pour in the heavy cream and bring to a gentle simmer.
  15. Add Parmesan and Gorgonzola cheese, stirring until fully melted and smooth.
  16. Season with salt, black pepper, and red pepper flakes if using.
  17. If the sauce is too thick, stir in reserved pasta water, a little at a time, until desired consistency is reached.
  18. Step 4: Assemble the Dish
  19. Slice the rested steak into thin strips.
  20. Add the drained pasta to the sauce, tossing to coat evenly.
  21. Plate the pasta and top with sliced steak.
  22. Garnish with fresh parsley and additional Parmesan if desired.
