Salsa Verde Chicken and Rice Recipe

Creating delicious meals doesn't need a lot of complicated tools. This Salsa Verde Chicken and Rice recipe is simple. It uses one-pot cooking, making it easy and fun to prepare.

Ingredients
  

  • 2 pounds chicken thighs
  • 1 cup long-grain white rice
  • cups salsa verde
  • 2 cups chicken broth
  • 1 diced onion
  • 2 minced garlic cloves
  • Salt and pepper to taste

Equipment

  • Large cast-iron skillet or deep cooking pan
  • Sharp chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method
 

  1. Season chicken with salt and pepper
  2. Brown chicken in skillet for 4-5 minutes per side
  3. Remove chicken, sauté onions and garlic
  4. Add rice, salsa verde, and chicken broth
  5. Return chicken to pan, cover and simmer
  6. Cook for 20-25 minutes until rice is tender
