roasted cauliflower salad

Ingredients
  

  • 1 large head of cauliflower cut into florets
  • 1/4 cup olive oil
  • 1/2 cup sliced almonds
  • 1/2 cup kalamata olives pitted and halved
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, salt, and pepper on the baking sheet.
  3. Roast for 25-30 minutes, stirring halfway through, until golden brown.
  4. Toast almonds in a dry skillet over medium heat until fragrant.
  5. In a large bowl, combine roasted cauliflower, toasted almonds, olives, and feta.
  6. Sprinkle with fresh parsley and serve warm or at room temperature.
