Ingredients
  

  • 1 medium head of cabbage cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped fresh herbs parsley, cilantro, or mint

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Brush cabbage wedges with olive oil and season with salt and pepper.
  • Place cabbage on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  • While the cabbage roasts, whisk together orange juice, lemon juice, and honey in a bowl.
  • Slowly drizzle in the extra virgin olive oil, whisking constantly to emulsify.
  • Once the cabbage is golden and tender, remove from the oven and let cool slightly.
  • Arrange the roasted cabbage on a platter, drizzle with citrus vinaigrette, and sprinkle with fresh herbs.
