Ingredients
  

  • 1 medium head of cabbage cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped fresh herbs parsley, cilantro, or mint

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Brush cabbage wedges with olive oil and season with salt and pepper.
  3. Place cabbage on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. While the cabbage roasts, whisk together orange juice, lemon juice, and honey in a bowl.
  5. Slowly drizzle in the extra virgin olive oil, whisking constantly to emulsify.
  6. Once the cabbage is golden and tender, remove from the oven and let cool slightly.
  7. Arrange the roasted cabbage on a platter, drizzle with citrus vinaigrette, and sprinkle with fresh herbs.
