Ingredients
  

  • 4 medium-sized beets
  • 6 cups mixed salad greens
  • 4 oz crumbled goat cheese
  • 1/2 cup chopped walnuts
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 50-60 minutes until tender.
  3. Let beets cool, then peel and slice them.
  4. In a bowl, mix olive oil, balsamic vinegar, salt, and pepper.
  5. Toss salad greens with half the dressing.
  6. Arrange greens on plates, top with beets, goat cheese, and walnuts.
  7. Drizzle remaining dressing over the salad.
