Red beans and rice

Ingredients
  

  • 1 pound dried red kidney beans
  • 1 pound smoked sausage sliced
  • 1 large onion chopped
  • 2 celery stalks diced
  • 3 garlic cloves minced
  • 2 cups long-grain white rice
  • Water or chicken stock
  • Creole seasoning
  • Salt and pepper to taste

Equipment

  • Large heavy-bottomed pot or Dutch oven

Method
 

  1. Soak beans overnight in cold water
  2. Drain and rinse beans thoroughly
  3. Brown sausage in pot
  4. Add vegetables and sauté until soft
  5. Add beans, seasonings, and liquid
  6. Simmer for 2-3 hours until beans are tender
  7. Prepare rice separately or in the same pot
  8. Serve hot with fresh chopped parsley
