pineapple chicken stir-fry

Ingredients
  

  • 1.5 lbs boneless chicken breasts
  • 1 cup fresh pineapple chunks
  • 2 bell peppers red and green
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 2 cloves minced garlic

Equipment

  • Large wok or non-stick skillet
  • Sharp chef's knife
  • Cutting board

Method
 

  1. Dice chicken into bite-sized pieces
  2. Chop vegetables and pineapple
  3. Heat oil in skillet over medium-high heat
  4. Cook chicken until golden brown (5-7 minutes)
  5. Add vegetables and pineapple
  6. Pour sauce and simmer for 3-4 minutes
  7. Serve hot over rice
