- Pat salmon fillets dry with paper towels
- Season salmon with salt and pepper
- Heat olive oil in skillet over medium-high heat
- Sear salmon for 4-5 minutes per side
- Remove salmon and set aside
- In same skillet, sauté garlic until fragrant
- Add cream, broth, and sun-dried tomatoes
- Simmer sauce for 3-4 minutes
- Return salmon to skillet
- Add spinach and cook until wilted
- Sprinkle with garlic bread crumbs before serving
