Ingredients
  

  • 1 cup orzo pasta
  • 1 can 15 oz white beans, drained
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes chopped
  • 3 garlic cloves minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a deep skillet over medium heat
  • Sauté minced garlic until fragrant (about 1 minute)
  • Add orzo and toast lightly for 2 minutes
  • Pour in 2.5 cups vegetable broth
  • Simmer for 8-10 minutes, stirring occasionally
  • Stir in white beans and sun-dried tomatoes
  • Add spinach and cook until wilted
  • Season with salt and pepper
