  • 2 cans 14.75 oz each pink salmon, drained
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • 1/4 cup finely chopped onion
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil for frying

Method
 

  1. In a large bowl, mix canned salmon, breadcrumbs, eggs, onion, lemon juice, salt, and pepper.
  2. Form the mixture into 8 patties, about 1/2 inch thick.
  3. Heat oil in a skillet over medium heat.
  4. Cook patties for 3-4 minutes on each side until golden brown.
  5. Drain on paper towels and serve hot.
