no-cook grated beet & carrot salad

Looking for a quick and healthy meal? This no-cook grated beet & carrot salad is perfect. It's full of flavor and nutrients, great for any time.

Ingredients
  

  • 2 medium beets peeled
  • 2 large carrots peeled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped fresh herbs parsley, dill, or cilantro

Equipment

  • Box grater or food processor with grating attachment
  • Large mixing bowl
  • Cutting board and knife
  • Measuring spoons and cups

Method
 

  1. Grate the beets and carrots using a box grater or food processor.
  2. In a large bowl, mix the grated vegetables.
  3. Whisk together olive oil, lemon juice, and honey in a small bowl.
  4. Pour the dressing over the vegetables and toss to combine.
  5. Season with salt and pepper to taste.
  6. If using, add chopped fresh herbs and mix gently.
  7. Chill for 30 minutes before serving to enhance flavors.
