Mini cherry cheesecakes
These small cheesecakes turn any event into a special moment. They're great for parties, potlucks, and family dinners because of their individual size. Each one has a creamy cheesecake base and a sweet cherry topping that everyone will love.
- 1½ cups graham cracker crumbs
- ¼ cup melted butter
- 16 oz cream cheese softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup cherry pie filling
Preheat oven to 325°F and line muffin tin with cupcake liners
Mix graham cracker crumbs with melted butter
Press crumb mixture into bottom of each liner
Beat cream cheese and sugar until smooth
Add eggs and vanilla, mix until fully combined
Pour cheesecake mixture over crust
Bake for 20-25 minutes until centers are set
Cool completely, then top with cherry filling
