Mini cherry cheesecakes

These small cheesecakes turn any event into a special moment. They're great for parties, potlucks, and family dinners because of their individual size. Each one has a creamy cheesecake base and a sweet cherry topping that everyone will love.

Equipment

  • 12-cup muffin tin
  • Cupcake liners
  • Electric mixer
  • Large mixing bowl
  • Measuring cups and spoons
  • Spatula
  • Wire cooling rack

Ingredients
  

  • cups graham cracker crumbs
  • ¼ cup melted butter
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling

Instructions
 

  • Preheat oven to 325°F and line muffin tin with cupcake liners
  • Mix graham cracker crumbs with melted butter
  • Press crumb mixture into bottom of each liner
  • Beat cream cheese and sugar until smooth
  • Add eggs and vanilla, mix until fully combined
  • Pour cheesecake mixture over crust
  • Bake for 20-25 minutes until centers are set
  • Cool completely, then top with cherry filling
