Mediterranean chicken and rice

Ingredients
  

  • 4 chicken thighs boneless, skinless
  • cups long-grain white rice
  • 3 cups chicken broth
  • 2 tablespoons olive oil

  • Large 12-inch skillet with lid
  • Sharp chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method
 

  1. Season chicken with salt, pepper, and herbs
  2. Heat olive oil in skillet, brown chicken 4-5 minutes per side
  3. Remove chicken, add rice and broth to same pan
  4. Return chicken to skillet, cover and simmer 20 minutes
  5. Let rest 5 minutes before serving
