Ingredients
  

  • 2 heads of romaine lettuce
  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon worcestershire sauce
  • 2 raw egg yolks
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Croutons for garnish

Method
 

  1. Wash and chop romaine lettuce into bite-sized pieces
  2. Prepare the dressing by whisking together lemon juice, worcestershire sauce, egg yolks, and minced garlic
  3. Slowly drizzle olive oil while continuously whisking to create a smooth emulsion
  4. Season the dressing with salt and pepper
  5. Gently toss lettuce with prepared dressing
  6. Sprinkle grated Parmesan cheese on top
  7. Garnish with croutons and serve immediately
