kale salad

This salad is full of nutrients and tastes amazing. It's not just a side dish. The mix of strong kale and tangy ginger is a treat for your taste buds and body.

  • 1 large bunch fresh kale
  • 2 medium carrots
  • 1 small piece fresh ginger
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Method
 

  1. Wash kale thoroughly and remove tough stems
  2. Chop kale into bite-sized pieces
  3. Peel and grate carrots
  4. Mince fresh ginger
  5. Whisk dressing ingredients until smooth
  6. Massage dressing into kale leaves
  7. Let salad sit for 10 minutes before serving
