Prepare the Pan
Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Warm the Wet Ingredients
In a small saucepan over low heat, melt the peanut butter and honey together, stirring until smooth.
Remove from heat and stir in vanilla extract and salt.
Mix the Dry Ingredients
In a large mixing bowl, combine oats, cinnamon, chopped nuts, and dried fruit.
Combine Everything
Pour the warm peanut butter mixture over the dry ingredients and stir until well coated.
If using chocolate chips, let the mixture cool slightly before adding them to prevent melting.
Press and Chill
Transfer the mixture to the prepared pan and press down firmly with a spatula or your hands.
Refrigerate for at least 1 hour until firm.
