 homemade Caesar salad

The salad starts with crisp romaine lettuce. It adds a nice crunch and a bright green color. Both pros and home cooks love its simple yet bold flavors.

Ingredients
  

  • 2 heads romaine lettuce
  • 1/2 cup fresh Parmesan cheese
  • 2 cloves garlic minced
  • 4 anchovy fillets
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 egg yolk
  • Croutons for topping

  • Large mixing bowl
  • Whisk

Method
 

  1. Mince garlic and anchovies together for a strong flavor base
  2. Whisk egg yolk with lemon juice
  3. Slowly add olive oil to make creamy anchovy dressing
  4. Chop romaine lettuce into small pieces
  5. Toss lettuce with dressing
  6. Sprinkle with Parmesan and croutons
