 homemade Caesar salad

The salad starts with crisp romaine lettuce. It adds a nice crunch and a bright green color. Both pros and home cooks love its simple yet bold flavors.

Equipment

  • Large mixing bowl
  • Whisk
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Ingredients
  

  • 2 heads romaine lettuce
  • 1/2 cup fresh Parmesan cheese
  • 2 cloves garlic minced
  • 4 anchovy fillets
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 egg yolk
  • Croutons for topping

Instructions
 

  • Mince garlic and anchovies together for a strong flavor base
  • Whisk egg yolk with lemon juice
  • Slowly add olive oil to make creamy anchovy dressing
  • Chop romaine lettuce into small pieces
  • Toss lettuce with dressing
  • Sprinkle with Parmesan and croutons
