Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 4 medium carrots chopped
  • 3 celery stalks diced
  • 1 large onion chopped
  • 4 garlic cloves minced
  • 2 cups chicken broth
  • 1 cup white wine optional
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in Dutch oven over medium-high heat
  2. Season chicken with salt and pepper, brown on all sides
  3. Remove chicken, sauté vegetables until softened
  4. Add garlic, cook for 30 seconds
  5. Return chicken to pot, add broth and wine
  6. Simmer for 45-60 minutes until chicken is tender
  7. Remove bay leaves before serving
