  • Large mixing bowl
  • Cutting board
  • Sharp chef's knife
  • Measuring cups and spoons
  • Skillet or grill pan
  • Whisk for flavorful dressing

Ingredients
  

  • 1 lb lean ground turkey or chicken
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup black beans
  • 1/4 cup red onion diced
  • 1/2 cup corn kernels
  • 1/4 cup cilantro chopped
  • Flavorful Dressing Ingredients
  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions
 

  • Brown the meat in a skillet over medium heat
  • Season meat with taco seasoning
  • Chop vegetables while meat cooks
  • Whisk dressing ingredients in a small bowl
  • Layer salad ingredients in a large bowl
  • Top with cooked meat
  • Drizzle with flavorful dressing
