Grilled Zucchini Salad

Ingredients
  

  • 2 medium zucchinis sliced lengthwise
  • 1 cup fresh corn kernels
  • 1 cup cherry tomatoes halved
  • Optional: Artisanal vinegars from Modena for dressing
  • Extra virgin olive oil
  • Salt and freshly ground black pepper

  • Outdoor grill or grill pan
  • Sharp chef's knife
  • Cutting board
  • Large mixing bowl

Method
 

  1. Preheat grill to medium-high heat
  2. Brush zucchini with olive oil
  3. Grill zucchini 3-4 minutes per side until charred
  4. Remove and chop into bite-sized pieces
