grilled chicken breast salad

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup fresh basil leaves
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Marinate chicken in olive oil, salt, and pepper for 15 minutes
  2. Preheat grill to medium-high heat
  3. Grill chicken for 6-7 minutes per side until fully cooked
  4. Let chicken rest for 5 minutes, then slice
  5. Arrange salad greens on plate
  6. Top with sliced chicken, tomatoes, and feta
