Ingredients
  

  • 2 cups cooked white rice day-old preferred
  • 1 pound medium shrimp peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 eggs lightly beaten
  • 1/2 cup frozen peas and carrots
  • 3 green onions chopped
  • Sauce ingredients:
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder

Equipment

  • Large wok or non-stick skillet
  • Sharp chef's knife
  • Cutting board
  • Wooden spatula or turner
  • Measuring cups and spoons

Method
 

  1. Prepare all ingredients before starting (mise en place)
  2. Heat oil in wok over medium-high heat
  3. Cook shrimp for 2-3 minutes, then remove
  4. Scramble eggs in same pan
  5. Add rice and vegetables, stir-fry for 3-4 minutes
  6. Return shrimp to pan, add sauce
  7. Cook for additional 2 minutes
