- Preheat oven to 375°F
- Caramelize onions in olive oil (about 20 minutes)
- Season chicken breasts with thyme, salt, and pepper
- Layer caramelized onions in baking dish
- Place chicken on top of onions
- Pour beef broth around chicken
- Sprinkle Gruyère cheese over chicken
- Bake for 25-30 minutes until chicken is cooked through
