Fiesta Shrimp Bowl

Bright, bold, and packed with protein, this Fiesta Shrimp Bowl brings together seasoned shrimp, rice, corn, black beans, and creamy avocado in a satisfying bowl.

Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 tbsp olive oil
  • 2 cups cooked rice
  • 1 cup black beans drained
  • 1 cup corn
  • 1 avocado diced
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Equipment

  • Skillet or grill pan
  • Mixing bowls
  • Knife and cutting board

Method
 

  1. Toss shrimp with oil, chili powder, and cumin.
  2. Cook in a skillet over medium-high heat, 2–3 minutes per side.
  3. Assemble bowls: rice, shrimp, black beans, corn, avocado, cilantro.
  4. Squeeze fresh lime juice over top and serve.

Notes

Add Greek yogurt or chipotle mayo for extra flavor.
Swap rice for cauliflower rice for a low-carb option.
