Prepare the Rice:
In a small bowl, mix rice vinegar, sugar, and salt.
Pour over cooked rice and mix well. Spread evenly in a greased 9x13-inch baking dish.
Make the Filling:
In a mixing bowl, combine shredded imitation crab, Japanese mayo, sriracha, cream cheese, and soy sauce.
Assemble & Bake:
Spread the crab mixture evenly over the rice.
Sprinkle shredded cheese on top.
Bake at 375°F (190°C) for 10-15 minutes until cheese is melted and slightly golden.
Garnish & Serve:
Sprinkle furikake, green onions, and sesame seeds on top.
Serve warm with nori sheets for scooping or rolling.
