Ingredients
  

  • 1 pound pasta penne or rotini
  • 1 can 28 oz crushed tomatoes
  • 1 cup heavy cream
  • 4 cups vegetable broth
  • 3 cloves garlic minced
  • 1 small onion diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in the pot. Add onion and garlic, sauté until fragrant.
  • Add pasta, crushed tomatoes, broth, and dried basil. Stir well.
  • Bring to a boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally.
  • Once pasta is tender, stir in cream and Parmesan cheese.
  • Season with salt and pepper.
  • Serve hot, garnished with extra Parmesan if desired.
