  • Large skillet
  • Mixing bowl
  • Measuring cups and spoons
  • Cutting board and knife

Ingredients
  

  • Here are the mexican casserole ingredients you'll need:
  • 1 pound ground beef
  • 1 can black beans drained
  • 1 cup salsa
  • 1 packet taco seasoning
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can enchilada sauce
  • Optional toppings: sour cream diced tomatoes, sliced jalapenos

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Brown ground beef in a skillet over medium heat. Drain excess fat.
  • Add beans, salsa, and taco seasoning to the beef. Stir and simmer for 5 minutes.
  • Spread a thin layer of enchilada sauce in the baking dish.
  • Layer 4 tortillas, half the beef mixture, and 1 cup of cheese.
  • Repeat layers with remaining ingredients.
  • Pour remaining enchilada sauce over the top.
  • Bake for 25-30 minutes until cheese is bubbly.
  • Let cool for 5 minutes before serving with your favorite toppings.
