  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar or monterey jack
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 2 scrambled eggs
  • 2 tablespoons butter
  • Optional: Cooked bacon or ham
