  • Cocoa powder for coating

Method
 

  1. Place chopped chocolate in a heatproof bowl.
  2. Heat cream in a saucepan until it simmers. Pour over chocolate.
  3. Let stand for 5 minutes, then whisk until smooth.
  4. Add butter and vanilla, stirring until combined.
  5. Cover with plastic wrap and chill for 2 hours.
  6. Scoop mixture into small balls and place on a baking sheet.
  7. Roll each ball in cocoa powder to coat.
  8. Chill truffles for 30 minutes before serving.
