- Place chopped chocolate in a heatproof bowl.
- Heat cream in a saucepan until it simmers. Pour over chocolate.
- Let stand for 5 minutes, then whisk until smooth.
- Add butter and vanilla, stirring until combined.
- Cover with plastic wrap and chill for 2 hours.
- Scoop mixture into small balls and place on a baking sheet.
- Roll each ball in cocoa powder to coat.
- Chill truffles for 30 minutes before serving.
