creamy spinach tomato tortellini

  • 20 oz cheese tortellini
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes
  • 1/2 cup heavy cream
  • 3 garlic cloves minced
  • Garlic bread crumbs for topping
  • Salt and pepper to taste

Method
 

  1. Boil tortellini according to package directions
  2. Drain pasta, reserving 1/4 cup cooking water
  3. Sauté minced garlic in olive oil
  4. Add spinach and tomatoes, cooking until wilted
  5. Stir in cream and reserved pasta water
  6. Combine sauce with tortellini
  7. Sprinkle garlic bread crumbs on top
