Sauté the Aromatics
Heat olive oil or butter in a large pot over medium heat.
Add diced onion, garlic, carrots, and celery. Sauté for 3–4 minutes until softened.
Cook the Chicken
Add diced chicken, salt, black pepper, Italian seasoning, and red pepper flakes.
Cook for about 5 minutes until the chicken is lightly browned.
Simmer the Broth
Pour in the chicken broth and bring to a boil.
Reduce heat and let simmer for 15 minutes until the chicken is cooked through.
Make It Creamy
Stir in heavy cream, sun-dried tomatoes, and Parmesan cheese.
Let simmer for another 5 minutes, stirring occasionally.
Add the Greens
Stir in chopped spinach and fresh basil.
Cook for 2 more minutes until the spinach is wilted.
