Creamy Marry Me Chicken Soup Recipe

This creamy chicken soup adds a delightful twist to the "marry me chicken" concept. It's filled with rich, velvety flavors and tender chicken. This recipe makes the classic soup even more delicious. It's irresistibly comforting and surprisingly easy to make.

Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 1 pound boneless skinless chicken breast (or thighs), diced
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes chopped
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach chopped
  • 1 tablespoon fresh basil chopped (or 1 teaspoon dried basil)

Method
 

  1. Sauté the Aromatics
  2. Heat olive oil or butter in a large pot over medium heat.
  3. Add diced onion, garlic, carrots, and celery. Sauté for 3–4 minutes until softened.
  4. Cook the Chicken
  5. Add diced chicken, salt, black pepper, Italian seasoning, and red pepper flakes.
  6. Cook for about 5 minutes until the chicken is lightly browned.
  7. Simmer the Broth
  8. Pour in the chicken broth and bring to a boil.
  9. Reduce heat and let simmer for 15 minutes until the chicken is cooked through.
  10. Make It Creamy
  11. Stir in heavy cream, sun-dried tomatoes, and Parmesan cheese.
  12. Let simmer for another 5 minutes, stirring occasionally.
  13. Add the Greens
  14. Stir in chopped spinach and fresh basil.
  15. Cook for 2 more minutes until the spinach is wilted.
