Sauté the Aromatics
Heat olive oil in a large pot over medium heat.
Add diced onion, garlic, carrots, and celery. Sauté for 3–4 minutes until softened.
Cook the Chicken
Add diced chicken to the pot and cook until lightly browned, about 5 minutes.
Simmer the Broth
Pour in the chicken broth and add thyme, oregano, salt, and black pepper.
Bring to a boil, then reduce heat and let simmer for 15 minutes.
Cook the Pasta
Stir in the pasta and cook for 8–10 minutes until tender.
Make It Creamy
Reduce heat to low and stir in the heavy cream.
Add fresh spinach and cook for another 2 minutes until wilted.
Finish and Serve
Stir in Parmesan cheese (if using) and a squeeze of lemon juice.
Taste and adjust seasoning as needed.
Ladle into bowls and serve warm.
