Creamy Chicken Soup with Pasta and Spinach Recipe

Ingredients
  

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 1 pound boneless skinless chicken breast (or thighs), diced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 cup small pasta such as ditalini or elbow
  • 1 cup heavy cream or half-and-half
  • 2 cups fresh spinach chopped
  • ½ cup grated Parmesan cheese optional
  • Juice of ½ lemon for brightness

Method
 

  1. Sauté the Aromatics
  2. Heat olive oil in a large pot over medium heat.
  3. Add diced onion, garlic, carrots, and celery. Sauté for 3–4 minutes until softened.
  4. Cook the Chicken
  5. Add diced chicken to the pot and cook until lightly browned, about 5 minutes.
  6. Simmer the Broth
  7. Pour in the chicken broth and add thyme, oregano, salt, and black pepper.
  8. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  9. Cook the Pasta
  10. Stir in the pasta and cook for 8–10 minutes until tender.
  11. Make It Creamy
  12. Reduce heat to low and stir in the heavy cream.
  13. Add fresh spinach and cook for another 2 minutes until wilted.
  14. Finish and Serve
  15. Stir in Parmesan cheese (if using) and a squeeze of lemon juice.
  16. Taste and adjust seasoning as needed.
  17. Ladle into bowls and serve warm.
