cooker birria tacos

Ingredients
  

  • 4 lbs beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 white onion chopped
  • 6 garlic cloves minced
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Equipment

  • 6-quart crock pot or slow cooker
  • Sharp kitchen knife
  • Cutting board
  • Measuring cups and spoons
  • Large mixing bowl
  • Tongs
  • Rimmed baking sheet

Method
 

  1. Clean and toast dried chilies in a hot skillet
  2. Blend chilies with garlic and spices to create marinade
  3. Coat beef thoroughly with prepared marinade
  4. Place marinated meat in slow cooker
  5. Cook on low for 8 hours until meat is tender
  6. Shred meat and prepare consomé
  7. Serve with warm tortillas
