Ingredients
  

  • For the graham cracker crust:
  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • For the cream cheese filling:
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • For the strawberry topping:
  • 2 cups fresh strawberries sliced

  • 1 tbsp lemon juice

Instructions
 

  • Preheat oven to 325°F (165°C)
  • Mix graham cracker crumbs, sugar, and melted butter
  • Press mixture into the springform pan
  • Bake crust for 10 minutes, then cool
  • Beat cream cheese and sugar until smooth
  • Add eggs one at a time, mixing well
  • Stir in vanilla extract
  • Pour filling over crust
  • Bake for 55-60 minutes
  • Cool, then refrigerate for 4 hours
  • Top with fresh strawberry mixture before serving
