- Preheat oven to 400°F
- Cut spaghetti squash in half lengthwise
- Scoop out seeds and season with salt
- Roast squash for 35-40 minutes
- Prepare spinach artichoke stuffing while squash roasts
- Mix cream cheese, spinach, artichokes, and seasonings
- Remove squash from oven and fill with mixture
- Sprinkle parmesan cheese on top
- Bake an additional 10 minutes until cheese melts
