classic spinach and artichoke dip with spaghetti squash

This healthy comfort food combines the classic spinach and artichoke dip with spaghetti squash. Each bite is a mix of nutrients and indulgence. It shows that eating healthy can be incredibly tasty.

Ingredients
  

  • 1 medium spaghetti squash
  • 2 cups fresh spinach
  • 1 cup artichoke hearts chopped
  • 1/2 cup cream cheese
  • 1/4 cup grated parmesan
  • 2 cloves garlic minced
  • Salt and pepper to taste

  • Large baking sheet
  • Sharp chef's knife
  • Mixing bowl

Method
 

  1. Preheat oven to 400°F
  2. Cut spaghetti squash in half lengthwise
  3. Scoop out seeds and season with salt
  4. Roast squash for 35-40 minutes
  5. Prepare spinach artichoke stuffing while squash roasts
  6. Mix cream cheese, spinach, artichokes, and seasonings
  7. Remove squash from oven and fill with mixture
  8. Sprinkle parmesan cheese on top
  9. Bake an additional 10 minutes until cheese melts
