Ingredients
  

  • 2 chicken breasts boneless, skinless
  • 1 cup pineapple chunks fresh or canned
  • 2 tbsp chipotle peppers in adobo sauce chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 lime zested and juiced
  • 8 small corn or flour tortillas
  • Fresh cilantro for garnish
  • Optional toppings: avocado sour cream, sliced red onion, shredded cheese

Method
 

  1. Marinate the Chicken:
  2. In a mixing bowl, combine chopped chipotle peppers, pineapple chunks, olive oil, garlic powder, cumin, chili powder, lime zest, lime juice, salt, and pepper.
  3. Add chicken breasts to the bowl and toss to coat. Let the chicken marinate for at least 20-30 minutes, or up to 2 hours in the fridge.

  10. Place a few slices of grilled chicken on each tortilla.
