Cook the Chicken – In a large skillet, heat the olive oil over medium heat. Add the chicken breasts or thighs and cook for about 6-8 minutes per side, or until the chicken is cooked through and browned. Remove from the pan and set aside.
Prepare the Sauce – In the same skillet, add the sliced onion and cook for about 3-4 minutes, until softened. Add the minced garlic and chipotle peppers, cooking for another 1 minute.
Blend the Sauce – Add the diced tomatoes, cumin, chili powder, apple cider vinegar, salt, pepper, and chicken broth to the pan. Stir to combine. If you prefer a smoother sauce, you can blend it using a hand blender or in a regular blender before returning it to the skillet.
Simmer – Shred the cooked chicken with a fork, then add it back into the skillet with the sauce. Stir to combine. Let it simmer on low heat for 10-15 minutes, allowing the chicken to soak up the flavors of the sauce.
Serve – Garnish with fresh cilantro, if desired. Serve the Chicken Tinga in tacos, burritos, or over rice.
